According to the nature of their anthocyanidines, the anthocyanins pigments are divided into three groups which differ for the number of hydroxyls present: 1° GROUP of pelargonidin (scarlet red)
2° GROUP of cyanidin (crimson red)
present in flowers and in some fruits such as cherries, redcurrants, raspberries, etc.
